I made these yesterday morning. This recipe only makes about 4 pancakes, so you will want to double is wanting more.
Really yummy!
1/2 cup all-purpose flour (I used 1/2 white, 1/2 whole wheat)
1/2 cup quick cooking oats
1 tablespoon white sugar (I used raw sugar)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
1 teaspoon vanilla extract
2 tablespoons vegetable oil
1 egg
Place flour, oats, sugar, baking powder, baking soda, salt, buttermilk, vanilla, oil and egg in a mixing bowl and mix until smooth. (I seperated the egg, and beat the egg whites, and then added at the end)
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
